Super Healthy Crockpot Paleo Chili (No Beans!)

As a busy stay-at-home and homeschooling mama, easy dinners are a MUST at our house, and nothing’s easier than having a crockpot cook dinner, amiright? The only problem is most of my old crockpot recipes aren’t exactly healthy, and typically include dairy and/or grains. I’m constantly on the lookout for new and healthy crockpot recipes that fit within mine and my family’s dietary restrictions (one full-blown dairy allergy, mostly gluten-free all around, and I’m personally grain-free, dairy-free and bean-free). No easy task to find something that fits us all!

Enter this delicious, crazy healthy, crazy delicious, and hearty beanless/grainless/dairyless Chili recipe. It is so yummy and filling, you won’t miss the beans at all (but feel free to add them in if you wish!)! This recipe isn’t quite as easy as my Crockpot Bison Tacos, BUT it is so worth the extra prep time. I browned the meat first, and washed and chopped up all the veggies (look at all those fresh veggies!!! ➡️).

You can use whatever meat you would like. We used ground turkey because it’s what I had, but you can use ground beef or ground bison (going to make that version next!!). 

You can make this recipe without a crockpot if you don’t have one, but I would highly recommend getting one! Even a non-fancy one like mine works, but someday I want to upgrade to this one.* #Crockpotgoals! If you don’t have a crockpot, use a giant pot with cover on the stove, and simmer several hours until veggies are tender.

I could bore you with several more paragraphs of fluff, but instead I’ll just get straight to the recipe. Like I’ve mentioned before, I hate having to scroll through a ton of stuff just to get to a recipe.

Super Healthy Paleo Chili

All the flavor, warmth, and heartiness of a big bowl of chili, without the beans and with allll the healthy veggies! Paleo, Whole30, Grain-free, Gluten-Free, Healthy, EASY, and delicious!

prep time: 15 minscook time: 6 hourtotal time: 6 hours and 15 mins

ingredients

  • 1 lbs ground turkey (or beef or bison), browned
  • 3 medium zucchinis, chopped
  • 1 medium yellow squash, chopped
  • 1 green pepper, diced
  • 15 baby carrots, cut in half
  • 1 small onion, (optional, I skipped it)
  • 1 celery stalk (also optional)
  • 1 cup low sodium chicken broth
  • 1 15-oz can tomato sauce
  • 1 15-oz can diced tomatoes (not drained)
  • 2.5 cloves minced garlic
  • 2 tbsp chili powder (I used hot Mexican style)
  • 2 tsp ground cumin
  • 1.5 tsp oregano
  • 1.5 tsp salt

instructions

  1. Brown your meat on the stove.
  2. Prep your veggies; I left the peels on mine (way more nutrients that way!).
  3. Place the broth and spices in the crockpot and stir until mixed.
  4. Add the meat and chopped veggies and stir until well combined. Put cover on the crockpot and cook on low 4-6 hours, or until veggies are tender.
  5. Spoon out and top with your favorite chili toppings (I highly recommend Daiya dairy-free cheddar shreds; regular cheese works great as well, of course!).
  6. Enjoy!
